Creme Brûlée


My favourite dessert is creme brûlée. This creaming sweet French dessert is divine. There is no way you can mess it. 
My recipe is a little different but easy. 

This recipe makes 4 ramekins. 

Ingredients:

  • 5 egg yolks ( make sure the eggs are at room temperature) 
  • 3/4 cup of sugar. 
  • 3 cups of heavy cream. (Room temperature)
  • 1/2 tsp of vanilla extract 

-Preheat the oven to 350 degrees 
– In a steel bowl whisk egg yolks and sugar. 
-You will need double boiler. So take a sauce pan with water . Let it come to boil. Put the steel bowl on top of the sauce pan . Make sure the flame is on medium heat not too high. 
-Now whisk the egg yolks and sugar, as you see the sugar is dissolved slowly add heavy cream. Keep whisking. 
-Make sure not to over cook the eggs , they will become scrambled eggs otherwise. 
-When whisking the cream add vanilla extract. 
-Whisk the mixture until it becomes smooth and a little custard like . Not very thick. 
-Now in a deep rectangular pan add hot water . Pour the egg mixture in the ramekins. 
-Put the ramekins in the pan with water. 
-Place the pan in the oven uncovered for 20 to 25 minutes .
-Take out the ramekins and let them cool. 
-Once the ramekins are completely cool , sprinkle sugar on the custard a tsp . If you have blow torch you can caramelize the sugar or put it under the boiler. Until the sugar turns dark golden brown. 
-After 25 minutes take out the pan , the ramekins will be still jiggly. 

Chill the custard in the fridge . Take it out before serving. 

For honey glazed walnuts, you will need honey and walnuts. In a small saucepan, add honey and walnuts . Cook until honey caramelize. 
Let it cool . 
Before serving add some walnuts on top for garnish.
