Orange Cranberry Scones

Every year over the holidays I make Orange Cranberry Scones. Scones go perfect with tea and coffee .Let’s come to recipe of the scones . I have used whole wheat all purpose flour. You can use white all purpose flour as well. Preheat the oven to 400 degrees. 

Ingredients; 

  • 2 1/2 cup of all purpose flour ( white or whole wheat) 
  • 1/2 cup sugar 
  • 1 tbsp of baking powder 
  • 1/2 tsp of salt
  • 6 tbsp of soft unsalted butter 
  • 1 cup of dried cranberries 
  • 1 large egg 
  • 1 egg yolk 
  • 1 cup of cream 
  • 2 tbsp of orange zest . 

Icing:

  • 2 tbsp of icing sugar 
  • 1 tbsp of orange juice 

(Make a consistency of thick runny paste . Proportion might  vary) 

So first mix all the dry ingredients, flour, salt , baking powder and sugar and orange zest. Using electric mixer add butter in the flour mixture and mix. 

Then add egg one by one and slowly add cream. It will make a soft dough. Now add in cranberries and mix gently. Let the dough chill for few minutes in the fridge.It makes easy to roll and cut scones. 

On a clean kitchen surface , sprinkle flour and roll the dough. Roll to 1/2 a inch thick . Cut in triangles or any shape you want. Bake for 20 minutes on 400 degrees. Until they are nice light golden. Take them out and let them cool for 10 minutes . Once completely cool drizzle icing.
