Garden Fresh Farro salad with cranberries

Farro grain is the a wheat specie, high in protein and fibre. Its easy to cook , great in salads , soups and side dishes. Great for summer time salads , serve cold. Complete source of protein for kids , family or if you are vegetarian.

  • 1 cup Farro Grain (when boiled becomes 2 cup.)
  • 1 cup chopped cucumbers (1 large cucumber / 4 baby cucumbers)
  • 1 cup cherry tomatoes (cut in half)
  • ½ cup black olives (chopped )
  • ½ cup dried cranberries
  • ¼ cup chopped mint or parsley
  • 2 tbsp oive oil
  • 1 tbsp balsamic vinegar
  • 2 tsp lemon juice
  • ½ tsp salt (or to taste)
  • 1 tsp black pepper
  1. In a sauce pan add 2½ cups of water and let it boil. Once it starts to boil add the 1 cup of farro grain. Boil for 10 minutes or until the grains become soft.

    Drain and let them cool in fridge.

  2. Now take a large bowl and add all the chopped vegetables and farro grain.

    Make the dressing in a small bowl and taste it. It's always great to taste the dressing , some time recipe proportions differ for some.

    Now mix it all up and let it cool in the fridge before serving.
